Ingredients

4 slices sourdough bread
50 g Pomodoro sauce
100 g eggplants
8 leaves basil
100 g shredded mozzarella cheese
50 g grated Parmesan cheese
4 tbsp butter
4 slices Roasted tomato
  • Step 1/8

    • 100 g eggplants

    Fry the eggplants for 5 mins. Cook it with the pomodoro sauce for 5 more mins.

  • Step 2/8

    • 4 slices sourdough bread
    • 50 g Pomodoro sauce

    Add 1 tbsp of pomodoro sauce on each slice

  • Step 3/8

    • 100 g shredded mozzarella cheese
    • 50 g grated Parmesan cheese

    Add mozzarella and parmesan on each slice

  • Step 4/8

    • 8 leaves basil
    • 4 slices Roasted tomato

    Add roasted tomatoes and basil on each side

  • Step 5/8

    Melt the cheese in the oven for 5 mins on a high heat.

  • Step 6/8

    Add the aubergine on on side of the sandwich and then arrange them.

  • Step 7/8

    • 4 tbsp butter

    Melt butter and panfry the sandwiches till crispy

  • Step 8/8
