Start by grilling the bacon. Whilst the bacon is cooking, whisk together the eggs, milk, flour, salt, pepper and baking powder to make a batter. Add the parmesan and 2 1/2 tbsp of the chives to the pancake batter and mix well.
Heat a tbsp of oil in a large frying pan over a low to medium heat. Add a small amount of batter to the hot oil. Do this slowly as the batter will spread a little. You should be able to cook three or four at a time if using a large pan. Gentry fry the pancakes until golden brown in either side. (Tip, to stop your pancakes getting cold, place a pan of boiling water on the heat with a plate on top. Add your cooked pancakes and cover with foil until all the pancakes are ready to serve.)
Assemble the pancakes and bacon on the plate and top with a tbsp of sour cream. Sprinkle the remaining chives over the top. Enjoy!
