Preheat oven to 180°C. Prepare baking sheets or silicone baking mats.
Mix the peanut butter, honey, and baking soda.
Lightly mix the egg and vanilla in a small bowl then add to the peanut butter mixture. If you want to refrigerate the dough, now is the time. An hour works best.
Scoop the batter with a small cookie scoop and align them on the baking sheet or silicone mat.
Baking time is about 10-12 minutes or until edges are starting to brown. Allow cookies to rest on a wire rack and enjoy when cooled!
