Whisk 5 egg yolks with 100 g of sugar and the vanilla sugar until the mixture whitens and becomes very frothy. Then gradually add the cream while stirring.
Distribute the mass in bowls, but make sure that the mass is not higher than 4cm, otherwise it will not become solid.
Place the bowls in the oven for about 50min at 100-140 degrees. Afterwards you let them cool down and keep them in the fridge. Before you want to serve it, you have to put it in the freezer for 20min and then you can caramelize it with a pinch of brown sugar. You can do this with a kitchen torch or in the oven under the grill at the highest level for a few seconds. Then serve and let it taste!
