In the huge mug or medium bowl, mix together yeast, warm milk, a little bit of sugar and flour. Set it aside for 10 minutes to rise.
In a separate, large bowl, mix together flour, sugar, salt, and cinnamon. Add the yeast mixture, egg, milk, and melted butter. Mix the ingredients together with a wooden spoon or a mixer (suitable for yeast dough) for a few minutes. Then, cover the dough with a clean kitchen towel and set aside to rise for around 30 minutes.
After this time, stir in chopped apples.
Heat a large pan with oil. It doesn't have to be a lot, but the layer should have around 3-5mm.
Soak a spoon in cold water, then scoop up a portion of the dough and put it in a pan. Fry for about 2 minutes each side over medium heat. The fritters should be golden brown.
Remove from the pan and place on a paper towel.
Sprinkle with icing sugar before serving!
