Peel the sweet potatoes, cut them in half and place them in a pot with boiling water for 30 minutes or until sweet potatoes are soft (you can check if they’re ready by pinching them with a fork).
Smash the sweet potatoes in a large bowl.
- 1 bar salted butter
- ½ cup sugar
- ½ cup brown sugar
- 1 tsp ground cinnamon
- 2 tsp vanilla extract
- 2 tsp lemons
Add 1 bar of melted butter, white sugar, brown sugar, vanilla, ground cinnamon and lemon to the smashed sweet potatoes. Mix everything with a fork.
- 2 eggs
- ½ cup sweetened condensed milk
Mix with a hand mixer and add the eggs, one by one, and sweet condensed milk while mixing.
- 1½ packages graham crackers
- ½ cup walnut
Crush graham crackers and walnuts in a food processor.
Place the cookie crumble on a pie dish with the other bar of melted butter. And with your hands mix it and incorporate it until you form a pie crust.
Place the sweet potato mixture on the crust. Bake 350 F for one hour.
