Step 1/6
- 1 package Pasta of choice
- Salt
Boil pasta in a pot of salted water, reserve one cup of pasta water and drain the rest
Step 2/6
- Olive oil
- 1 Onion, finely chopped
- 5 cloves Garlic, crushed
Drizzle a small amount of olive oil in a pan, over a medium heat cook onion and garlic for 3 minutes or until translucent
Step 3/6
Add the chorizo to the pan and fry for 5 minutes
Step 4/6
- 500 g Beef mince
- 400 g Whole Tinned Tomatoes
- 1 tbsp Tomato paste
- Pepper
- Chilli Powder
Brown the mince in the same pan then add carrots, tomatoes and tomato paste. Add salt, pepper and chilli powder to taste.
Step 5/6
Add the reserved pasta water to the pan and stir well. Turn heat to low and simmer for half an hour or until the sauce has reduced.
Step 6/6
Add the cooked pasta to the pan and stir to coat with sauce. Turn off the heat and serve.
